"The correct ratio for chocolate truffles is 2:1 chocolate to heavy cream. I noticed your truffles were a little soft and it is because the choc/cream ratio was off. Your total liquid was 1 cup cream plus 1/3 cup canna butter so the total liquid ounces is approximately 12.5 oz. You should be using 25 oz of chocolate to make them firm enough. They will be very firm and you wont get the ganache all over your hands."
